Marinated Cheese



Hey everyone!  So with the holidays here, we all like to gather together with our friends and family and eat some good food.  Right?  That's what the holidays is all about!  I thought I would share with ya'll this recipe for marinated cheese that I have been making for parties for years.  It's always a hit.  Who doesn't like cheese??

This particular recipe comes from the October 2006 issue of Southern Living.

Here are the ingredients you will need......

1 (0.7 oz) envelope Italian dressing mix

1/2 cup olive oil (or vegetable)

1/4 cup white vinegar

2 Tbsp minced green onion (I use 2 average size stalks)

2 Tbsp water

1 1/2 tsp sugar

1 (8 oz) block Monterey Jack cheese, chilled
1 (8 oz) block Cheddar cheese, chilled
1 (8 oz) package cream cheese, chilled

1 (4 oz) jar chopped pimiento, drained
Assorted crackers



Whisk together the first 6 ingredients and set aside.

Cut the Monterey Jack cheese in half lengthwise.

Then cut each half crosswise into 1/4 inch thick slices.

Repeat those same steps with the Cheddar cheese and the cream cheese.

Arrange the cheese in 4 rows in a shallow 2 qt baking dish, alternating the cheese.  ( I used a deep Ziplock container for the marinating process, but it was narrow so it works just as well as if you would use a shallow baking dish)

Pour the marinade over the cheese.

Cover and chill at least 8 hours.

When you're ready to serve it, carefully move your marinated cheese to your serving dish.  For extra flavor, I use a fork to grab all the green onions out the marinade and sprinkle them over the cheese.  I also drizzle a bit of the oil over the cheese too.

Then you drain your pimiento and sprinkle them over the cheese as well.

Serve with some assorted crackers of your choice and enjoy!

Such a simple and yummy dish to bring to any party for any occasion.
